My name is Mihribanözkan, and I grew up between two worlds: my grandmother's clay hearth in Konya, where she made etli ekmek before dawn, and a modern Istanbul apartment where the smell of dried fenugreek still managed to find its way into every room. Those two worlds shaped everything I believe about food.
For over fifteen years I have been quietly collecting what I call "disappearing recipes" — dishes that exist only in the memory of elderly aunts and village grandmothers, that never made it onto any restaurant menu and were never photographed for a glossy magazine. Recipes for Kars'ın Civil Peynirli Böreği, for Adıyaman'ın Çiğ Köftesi made the old way, for the sour-plum pestil my great-aunt pressed every September in Kastamonu.
I created mihribanozkan because these recipes deserve a proper home — not a social feed, not a paid subscription wall, not a page crowded with advertisements. Just the recipes, the stories behind them, and the regional context that makes them meaningful. This site is completely free and will always remain ad-free. It is my gift to anyone who loves Turkish food the way I do: deeply, curiously, and without hurry.

Red Pepper Paste — The Soul of Anatolian Cooking
Walk into any village kitchen across Anatolia in late August and you will find the same sight: long wooden boards covered with glistening mounds of crimson paste drying under a fierce Mediterranean sun. This is biber salçası — red pepper paste — being born. It is not a condiment. It is a foundation, a philosophy, a memory baked into the very clay of Turkish culinary identity.
The origins of biber salçası are tied to the Ottoman Empire's discovery of the chilli pepper, introduced via trade routes from the Americas in the 16th century. The people of Anatolia, already masters of preservation, recognised immediately that slow-cooked, salted pepper paste could survive the long winters and carry summer's intensity into the cold months. Villages in Gaziantep, Kahramanmaraş, and the Sivas plateau became especially renowned for their varieties — each region insisting its peppers, its sun, its hands, produced the finest paste.
